Summer Fruit French Flan aka Clafoutis (Dairy-Free)

 

Welcome to my blog! I hope you find something useful and yummy, and if you are reading this, you have stumbled upon my very first post! That is, not including the many blog posts I have never published…I’m sure many of you can relate. Nonetheless, this is a place where I’m looking forward to sharing some of my little joys with you in hopes that it encourages you to create something.

One thing about me is that I actually love making dessert more than eating them. I also much prefer eating homemade goods to store-bought. However, when it comes to French desserts, I’ve always shied away from making them, because of the expertise, precision, and skill that goes into the art of french goods. Then I stumble upon this French Clafoutis, a traditional flan-like french dessert traditionally made with cherries, but replaceable with a variety of fruits. This version of mine pretty much has 4 main steps to preparing it: mix fruits in sugar, blend rest of ingredients in a blender, pour over fruit, and bake!

 

This summer, I’ve been loving the fresh fruits I’ve found at the local farmer’s market – fresh berries, nectarines, and plums are in abundance. Going to the farmer’s market is one my favorite things to do; admiring the fresh flowers, getting exposed to a bounty of unique produce, smelling artisan bread, chatting with the farmers, learning about seasonality, trying delicious samples….the list can go on!! With that said, I was thinking of an easy dessert with the fruits I had and came upon this easy dessert that is quite fancy looking, don’t you think?

My version is dairy-free, unlike the conventional recipe made from butter and milk. I used coconut cream and almond milk, and I can tell you that it does NOT disappoint. The recipe is straightforward and the results are wonderful…what’s not to love about that? If you love a flan-like texture and caramelized fruit, this is for you! To me, it tastes a bit like a dutch baby pancake, but a bit sweeter and lighter. Hope that you give this a try!

 

Summer Fruit French Flan (Clafoutis)

A light french dessert that will certainly impress anyone you serve it to.

Ingredients

  • 1/2 cup + 3 tbsp all purpose flour
  • 1/2 cup sugar (set aside 2 tbsp to coat fruit)
  • 3 eggs
  • 1 cup almond milk (any plant-based milk works)
  • 1/4 cup coconut cream (not coconut milk; make sure you get the thick kind)
  • 2 tsp vanilla extract
  • 2 tsp freshly grated nutmeg (optional)
  • 1/4 tsp salt
  • zest of 1 lemon
  • 1 cup sliced nectarines
  • 1 cup blueberries
  • 1 cup sliced plums
  • 1/4 cup powdered sugar for garnish

Instructions

  1. Preheat oven to 350 degrees F.

  2.  In a medium sized bowl, add fruits and 2 tbsp of sugar, and toss together until fruit is evenly coated with sugar. 
  3.  Lightly spray pie pan with cooking spray and add in the fruit. 
  4. Combine the rest of the ingredients (besides powdered sugar) in a blender and blend until smooth. 
  5. Pour blended batter over fruit in pan. 

  6. Bake in the preheated oven for 45 to 55 minutes, until the clafoutis is puffed and brown and a knife inserted into the center comes out clean.

  7. Sprinkle with powdered sugar and serve warm.
