Summer Fruit French Flan (Clafoutis)

A light french dessert that will certainly impress anyone you serve it to.

Ingredients

  • 1/2 cup + 3 tbsp all purpose flour
  • 1/2 cup sugar (set aside 2 tbsp to coat fruit)
  • 3 eggs
  • 1 cup almond milk (any plant-based milk works)
  • 1/4 cup coconut cream (not coconut milk; make sure you get the thick kind)
  • 2 tsp vanilla extract
  • 2 tsp freshly grated nutmeg (optional)
  • 1/4 tsp salt
  • zest of 1 lemon
  • 1 cup sliced nectarines
  • 1 cup blueberries
  • 1 cup sliced plums
  • 1/4 cup powdered sugar for garnish

Instructions

  1. Preheat oven to 350 degrees F.

  2.  In a medium sized bowl, add fruits and 2 tbsp of sugar, and toss together until fruit is evenly coated with sugar. 
  3.  Lightly spray pie pan with cooking spray and add in the fruit. 
  4. Combine the rest of the ingredients (besides powdered sugar) in a blender and blend until smooth. 
  5. Pour blended batter over fruit in pan. 

  6. Bake in the preheated oven for 45 to 55 minutes, until the clafoutis is puffed and brown and a knife inserted into the center comes out clean.

  7. Sprinkle with powdered sugar and serve warm.
